Watermelon, Tomato and Mint Carpaccio

Ingredients



¼ small organic watermelon
1 bunch mint, half of which chopped finely into strips (chiffonade)
Olive oil to drizzle
Fleur de sel or other unrefined small chunky sea salt




Directions


Talk about taking the best of the best of summer and making it sizzle (without the heat)! This salad will bring zing to your summer dinner menu and is so easy it’s almost a crime. Your local farmers market or health food store may sell organic watermelon in halves or quarters, making it easy to stay economical. Use the same recipe but just cut into tiny chunks for little fingers to pop into small mouths.
