Broiled Black Cod with Tomato, Coconut Curry Sauce

Serves: 2

Ingredients



2 t tomato paste
1 t curry paste (or to taste)
½ C coconut milk (full fat)
Juice from ½ lime or small ½ lemon
1 t chopped cilantro (optional)
2 pinches unrefined sea salt and freshly ground pepper


Directions


Preheat broiler.

1. Rinse fillets, pat dry and lay flat in a shallow bowl. Sprinkle liberally with small grain unrefined sea salt and black pepper on both sides. Set aside.
2. In separate small bowl, mix together coconut milk, citrus juice and pastes until thoroughly combined. Add cilantro (optional). Taste for spiciness and add more curry paste to your liking.
3. Pour coconut paste mixture over fish and let sit for at least 10 minutes but no more than 20 minutes.
4. Broil for exactly 7 minutes and then check for doneness. Fish should flake in the thickest part of the fillet. Garnish with cilantro or parsley and serve.
