Napa Toasted Spice Rub

Ingredients


1/4 C Fennel seeds
1 T coriander seeds
1 T peppercorns
1 1/2 t red pepper flakes
1/4 C (1 ounce) California chili powder
2 T sea salt
2 T ground cinnamon


Directions


Michael Chiarello of Tra Vigne restaurant in Napa Valley came up with this heavenly exotic aromatic spice rub that you can use on just about everything. I have made it for myself, but it can easily be given as a gift. Although he uses kosher salt, I prefer the trace nutritional components inherent in unrefined sea salt, especially Lima, or any small grain salt. Try it on chicken or other meats. Bon Appetit!
