Parsnip and Sweet Potato Crisps
Serves: 4
Ingredients
½ pound sweet potatoes
Organic cold-pressed extra virgin Olive oil
Unrefined sea salt and pepper as desired
Directions
1. Set oven to 350 degrees.
2. Wash parsnips and sweet potatoes well. No need to peel, especially if organic.
3. Slice parsnips and sweet potatoes thinly, crosswise just like potato chips, then place in a bowl.
4. Drizzle lightly with olive oil and toss to coat evenly.
5. Spread evenly over 2 baking sheets and place in oven.
6. Check for doneness after 30 minutes. Make sure veggies are crispy rather than chewy without getting burned.
7. Add salt and pepper to taste. Eat while warm!
